Non-dairy Coconut Milk Ice Cream

I still want to play around with some variations of this recipe, but couldn't wait to share it with you.  Non-dairy coconut milk ice cream!  As you can see, we tried it out on the 4th of July.  We had it again last night with strawberries for dinner.  Yes, for dinner.  My kids were pretty confused about that one.

4 cups coconut milk (like this, not from a can, although that might be good too)
3/4 cup cane sugar
1 Tbs vanilla
1/2 tsp xanthan gum
1/8 tsp salt

Place ingredients in a blender.  Gradually add xanthan gum while blending.  Freeze in an ice cream machine.  Enjoy!  (If your blender can't handle that much liquid at a time, reserve 2 cups of the milk.  After blending everything else, pour into a bowl and whisk in the extra milk.)

I love that this recipe is so simple.  Its gluten free, dairy free, soy free, and egg free.  I can have it ready in about 30 minutes for a fun after dinner dessert.  We topped ours with Enjoy Life chocolate chips, and another time with fresh strawberries.  If you happen to have any leftovers, it freezes a bit solid, but quickly thaws and is delicious.  Let me know what variations you come up with!

  2. I have a dumb question...I do not like coconut milk at all I use almond milk would that work in this? I am VERY alergic to dairy and this sounds sooo yummy! I got your page from my sister in law Kristina Coffey. Anything else you can find dairy free would be awesome :)

    1. I'm not sure about almond milk, let me know if you give a try though. :) I'm still dairy free, so I'll have to do a round up of recipes I enjoy sometime soon.
