I found the recipe here. Actually, a friend found it and emailed me the link, thanks Katy! :)
4 cups coconut milk (like this, not from a can, although that might be good too)
3/4 cup cane sugar
1 Tbs vanilla
1/2 tsp xanthan gum
1/8 tsp salt
Place ingredients in a blender. Gradually add xanthan gum while blending. Freeze in an ice cream machine. Enjoy! (If your blender can't handle that much liquid at a time, reserve 2 cups of the milk. After blending everything else, pour into a bowl and whisk in the extra milk.)
I love that this recipe is so simple. Its gluten free, dairy free, soy free, and egg free. I can have it ready in about 30 minutes for a fun

ReplyDeleteI have a dumb question...I do not like coconut milk at all I use almond milk would that work in this? I am VERY alergic to dairy and this sounds sooo yummy! I got your page from my sister in law Kristina Coffey. Anything else you can find dairy free would be awesome :)
ReplyDeleteI'm not sure about almond milk, let me know if you give a try though. :) I'm still dairy free, so I'll have to do a round up of recipes I enjoy sometime soon.
